If there ever was a time to get creative with healthy meals it will be the next three weeks. Here is our pick for a fresh, healthy salad today. 

BACON, STRAWBERRY AND SPINACH SALAD
Now, this might at first sound like an odd combination, but pork and fruit are good friends. The combination of nuts, cheese and bacon makes for a well balanced protein salad. 

The honey and balsamic vinaigrette brings it all together.

Ingredients
150g cubed bacon bits.
1 cup of strawberries (sliced)
A generous bunch of baby spinach
1/4 cup balsamic vinegar
2 tablespoons honey
1/2 cup olive oil
125g gorgonzola cheese
1/2 cup raw walnuts
Salt and freshly ground black pepper

Preparation
Fry the bacon in a little bit of olive oil until cooked. Set aside to cool. Combine the strawberries, baby spinach, cheese and pecan nuts in a big bowl.

Combine the balsamic vinegar and honey. Slowly drizzle the olive oil into the mixture while continuously stirring. Now add the cold bacon bits. Season with salt and pepper and pour the dressing over the salad. 

Serve immediately.
