ASICS FrontRunner Megan Lagerwey is also known as 'The Good Gut Guru' - over the next few weeks she will be sharing a few of her favourite recipes. All easy to make at home, with basic ingredients and all to help keep your gut happy during this time.
Here's tomorrow's breakfast (or a late afternoon snack) sorted:
- 2 bananas
- 2 eggs or flax eggs
- 1/2 cup rolled oats
- 1/2 teaspoon baking powder
- Pinch of salt
- 2 tsp cocoa powder
In a blender, combine the banana, eggs, oats, cocoa, baking powder and salt. Allow to blend until the mixture is as smooth as you want it and blended well.Allow the batter to stand for 10-20 minutes until thickened slightly. Heat a non-stick frying pan over medium heat. Fry spoonfuls of the batter until golden brown on both sides. Serve with a drizzle of nut butter and fresh fruit of your choice. Enjoy
